Blog Post: Sweet Potato pancakes

Ingredients of the

Add a cup of Water for only 3/4 Multi-Grain Pancake Mix

1/2 large cooked sweet potato or 1 small, peeled and pureed (1/2 cup)

3/4 cup Apple juice

1 tsp pumpkin pie spice

4 oz Colombo low Fat Vanilla yogurt or other brand

2 Tbsp reduce calorie pancake syrup

1/4 cup blueberries

1/3 cup of pumpkin butter

Instructions

Mix together in a combination of sweet potato pancake, grape juice and spices.

Pumpkin Butter, yoghurt and syrup in a bowl mix together the separate.

In large nonstick skillet with a warm, coated with cooking spray cans over average low heat.

Ladle out of the mixture in small quantities (about 2 tablespoons). Cook pancakes until nicely browned on both sides. repeat with the remaining components of the mixture.

To serve: top pancakes pumpkin butter mixture. Garnish with berries. three pancakes and Produces approximately 3 1/2 tablespoons per normal serving.
